Profession Suggestion for the Latency Challenged

Due to GW2's servers being based in Austin, latency is going to be in the 200-260 kind of range for me.

Any suggestions for a Profession/Build that will mitigate that the most please?

I'm thinking Engineer or Elementalist but really have no idea, any suggestions are welcome.

That ping isn't that high. We Kiwis and Aussies, Asians and South Americans can attest to that.

This. You might consider avoiding some of the professions that rely a lot on perfectly timed dodges and evades in PvP, like glassier thief or weaver builds or (oddly enough) most greatsword warrior builds. Generally, though, you can adapt and learn to predict what's likely to come your way a bit. Just means you have a little less margin for slow reactions. Maybe include a little more survivability than you might otherwise to give you more room for error, but just about every profession has options to do so.

I've had instant cast warrior stances never activate so I don't know what to tell you other than good luck.

Core ranger would probably work well too. The pet performs the exact same with lag, for better or for worse.
