I play open world only. Will I still enjoy?

As everybody's saying; even though the 98% figure might sound like a horrible exaggeration.
I reckon it's off only by roughly 2%.

The sheer amount of stuff that can be done in the open world is honestly bananas, and it's not just blatantly copy-pasted escort quests or reskinned mobs, either.
If there's one thing roaming the Tyrian landscape lacks, however, it's challenging combat, but that's both relatively subjective, and can be "cheated" by simply doing [Group] events alone.
Right 'till You get acquainted with one Lord Hizen. Shouldn't be necessary, but never hurts to keep options in mind.

So let the wanderlust take You wherever it feels like.
It'll all ultimately come down solely to what You Yourself enjoy doing, and limitations - for better or worse - are very rarely the name of the game around these parts.

Open world is really where GW2 shines the brightest.  There is always something to do.  Yes there are bosses and metas (good loot and gold), but also exploration, events, puzzles, achievements, working on legendaries, races, and as mentioned 98% of the game.  I love open world, and spend the majority of my game play there.  Try it all, but you will be very happy with open world focus.  Best wishes!

This is the best open world game. 

All the best equipment (stat wise) can be acquired through open world.

World bosses are just a small, 10 year old open world vanilla content. All the expansion and living season maps bring the experience to another level with various events and other activities.

Keep in mind, these are only the biggest events, like full map wide full 50 man or more squad events. There are hundreds of other events and event chains that are just as interesting and fun and some can be just as big as these.

I was about to recommend looking at timers also. You can honestly have a lot of fun and fill quite a bit of time checking META events and world bosses coming up. You can in a way always be doing something

Open world is great in gw2. There's jumping puzzles which are a ton of fun the first time, there's events and chains that lead to large battles on some of the maps. A lot of events lead to other events and it's fun to see the flow of the map as you move through it. Slowly changing the structure of the map from enemy bases to taking them over and gaining ground. There's a lot of diversity too, some maps are just chill, while others are difficult. Some require weeks of leveling (at max level) to unlock required masteries to progress in them. So there's a sense of progression for many maps that can't be matched in most other mmos.

Open World PvE is literally the base of this game and you won't really miss much by staying away from any instanced content. You won't be able to get some legendary equipment: armor, backpack and rings, masteries, collections and skins... and you will miss story behind fractals and raids.

But it won't hurt your gameplay for sure. Ascended armor is still craftable.

The game is mainly open world. Where the core (non-expansion) zones nowdays can be considered as a tutorial - especially if you do them slowly leveling your char manually from level 1 to 80 also doing the personal story. Later stuff (expansion and living world) ... is similar. But everything at level 80 then.

And the maps do have events and achievements tied to them. Also exploration (stuff like jumping puzzles) and the world bosses. And stuff you can grind for (materials to get gear and legendaries).

Personally I try to avoid stuff where you have to make a premade-group. (Do fear that other players might get toxic.) The WvW pretty much ... is an open world with PvP focus though. Easy to just go there and tag a long. And PvP has a matchmaking and queues you randomly with others. I did those without problems. And I started fractals when there was some "fractal rush" since they are quick and easy at tier1+2. (And players there nice. Not expecting a lot from you - if you play at the lower tiers.)

Easier Icebrood strikes also okay. I have yet to try dungeons, harder strikes - and raids. (Where I have planned dungeons ... but need to find the time for it. Takes a bit longer than fractals.) For harder strikes and raids (more elitism and good/optimized playstyle needed there) I can understand though ... if that is not for everyone. Even with only open world PvE there is a ton to do though. That part is the main focus of the developers - and the strongest selling point of the game.

Yes, you will enjoy it, unless you decide you want to create legendary weapons.  The open world is quite enjoyable and many people enjoy only playing open world.  After a while, you may want items that required play in areas other than open PvE.  At this  point, I hope you'll decide to pursue more than PvE.  You may find it fun and rewarding.
