For a brief overview, there are 100 levels that cycle through 19 different maps. Each map has their characteristics with different boss mechanics. I would start from level 1 and work your way up. As it will give you a good grasp on how these maps play out. The higher you go the harder each level gets. You have random instabilities that occur that make it even harder, all of which is listed on the site.

For agony, the first 20 levels do not require agony, after that agony requirement will start to increase slowly. It is recommended to have 150 agony if you want to do the max level fractals, although you can get by this by using potions to increase your agony level it is better to have enough infusions that you don't need to use agony potions. There are other potions that also help increase your damage/speed and defense. Ascended armor/weapons/trinkets are needed to add agony infusions. You can either craft your armor and such or get lucky with drops. The drops are rare so crafting your first set is most likely the best option.

are there different types of infusions? different leveols?

fractals have different agony resist requirements 150 max at level 100. each infusion can be different. most common AR infusion use is usually 7 ar and 9 ar infusions and more costly infusion are +5 stat combo with agony resist. the right calculation of it will get you to 150.

There's a youtuber called Deroir he has fractal guides both for how to do fractals as well as infusions. I'm not 100% sure if he has a general introductory guide but ehh.
