Server Choice

Your server only matters for World vs. World. Everything else is shared.

The game uses a system they call mega-servers where all the servers in a region (NA or EU) are linked and share maps. So when you're in the open-world or in PvP matches you'll meet people from all the servers in your region. It's only in WvW that they're divided, because that's one server fighting against 2 others. And because the maps are shared guilds are region-wide as well, and some things like the Trading Post are actually game-wide.

So your server only matters if you want to play WvW with specific people. Other than that you can just pick any of them and get the same experience.

WvW is the promised land, the one true endgame. Very fun. 3 servers fight for 7 days across 4 maps that can hold ~80 people per side on each map.

This. WvW is the best content in game. Sadly we keep getting dull PvE pushed as the end game for some reason. Most of the playerbase likes to do really boring stuff unfortunately so WvW doesn't get much attention from anet.

World vs. World.

Worlds are the in-game name for servers. World vs. World is large scale PvP - 3 servers fighting against each other to capture towers, keeps and supply camps, all of which gets them points. The server with the most points at the end of the week (reset is on Friday) wins the match, and players get individual rewards for their progress too.
