Question about leveling

Do you miss out on anything if you progress through zones just doing map activities and leave the story for the end once you hit lvl 80?

No, it'll just be a little easier is all. But, the core story doesn't have much difficulty these days so it's not so noticeable.

There's no requirement to do story on level

You don't miss out on anything, but you might have to revisit places you've already been to for the story.

In your hero panel you can look for character adventurer guide achievments, as doing normal mapping with this in mind can speed up the process. You get extra xp for doing stuff you do anyway.

Opposite, it speeds the story completion up since you don't need to interrupt the story-playing to level up to reach the next minimum level to start the next chapter. And you may have the needed waypoints by then too. Saves you to puzzle out how to reach the next instance fastest.
