I appreciate English is usually the de facto lingua franca, but if they refuse to use it then nothing is stopping you from learning some of their language. Your comment would have validity if the host servers were the non English servers, except it's English servers getting German servers linked to them. People join English servers because that's a language they speak or it's the only language they speak, it's kinda understandable that people speaking English don't necessearily want to play with a server that doesn't speak English.
